Living in Qatar

Living in Qatar
     I'm asked repeatedly if I will ever write a book about the eight years I lived and taught in Qatar. Probably not. Although it was an incredibly interesting experience, I have never been inspired to write a book about my life there. I definitely prefer writing fiction. However, I do like to talk about those years, and since a blog is somewhat akin to talking, I will relate some of my experiences in a Muslim country in this blog. After Christmas, I will begin in earnest. Meanwhile, here is a picture of Santa on a camel. One of the compounds that housed Americans (U.S. citizens and Canadians) had Santa appear on a camel for their Christmas celebration.

Earlene's Famous Divinity Recipe

Earlene's Famous Divinity
2 1/2 cups granulated sugar
2/3 cup white corn syrup
1/2 cup water
1/4 teaspoon salt
2 egg whites
1/2 teaspoon vanilla or almond extract
Optional: 1/2 cup chopped nuts or coconut
Combine first four ingredients in saucepan. Stir over low heat until sugar dissolves.
Cover. Boil 1 minute, or until all sugar crystals have melted. Uncover. Cook gently,
without stirring to 265 Fahrenheit on candy thermometer, or until a little mixture in cold water forms almost-brittle ball.
In large electric-mixer bowl, with mixer at high speed, beat egg whites until stiff. Slowly pour on syrup, beating, until mixture loses gloss and small amount dropped from spoon holds its shape. Add vanilla. Add nuts or coconut if desired. Drop by spoonfuls into greased shallow pan.
